The perfect post-workout/ post breastfeeding snack!
2 ripe bananas, mashed
2 eggs, whisked
1/2 cup protein powder of your choice – I use a fermented vegan brown rice protein with vanilla
Coconut oil to grease the pan
Mix all ingredients together in a bowl. Bring the pan to medium heat, grease with a little coconut oil and spoon in the mixture whatever size you like your pancakes. Once the pancakes begin to bubble, flip them and cook the other side until golden.
