A quick, easy + nourishing recipe for fritters that make a great snack, breakfast, lunch or dinner.
They’re the ultimate lazy persons meal, requiring very little effort but yielding ample satisfaction.
1/2 cup spelt flour
1/2 teaspoon baking powder
Salt + pepper
2 tablespoons mint/dill/parsley/whatever you have
1 cup grated zucchini
1/4 cup feta
Combine everything in a large bowl.
Scoop tablespoons of the batter into a moderately hot non-stick pan coated in a drizzle of olive oil.
Cook in batches, flipping each fritter once the mix starts the bubble on one side – just like you would pancakes.
I like to eat them as is, but they’re also the perfect vessel for smashed avocado and poached eggs if you fancy something more substantial.
