Smokey Curried Lentils

1 tablespoon coconut oil
1 onion, finely diced
2 cloves garlic, sliced
½ teaspoon curry powder
¼ teaspoon turmeric
400g tin brown lentils
400g tin tomatoes
1 cup coconut cream
200g smoked tofu
Salt and pepper

Heat the coconut oil in a pot. Add in the onion and cook until it begins to colour. Add in the garlic and spices and stir continuously until the aromas release. Stop the toasting process by adding a tin of brown lentils, a tin of tomatoes and a cup of coconut cream. Stir to combine, season with salt and pepper and add in the tofu cubes.

Allow to simmer for about 10 minutes before serving with brown rice or over a baked sweet potato.
