Apple + Carrot Loaf

We’ve recently discovered the most abundant apple tree around the corner from our home. The apples are the best you’ve ever tasted – no exaggeration, I swear!

In homage to chilly mornings and days spent in pyjamas with the heater on, a warmingly spiced apple + carrot cake seemed fitting, so here you go…

1 1/2 cups spelt flour
1/2 cup coconut sugar
1/3 cup LSA
1 teaspoon baking powder
1 teaspoon bicarb
1 tablespoon apple pie spice (alternatively, you could use just cinnamon or a combination of your favourite warming spices)
Pinch of salt
2 cups grated carrot
2 cups grated apple
1/2 cup coconut oil, melted
3 eggs

Preheat oven to 190*C.

Combine all the dry ingredients in a large bowl.
Add in the wet ingredients and mix together.
Decant mix into a lined loaf tin.

Bake for about 45 minutes or until a skewer comes out clean.
Enjoy warm with lashings of salted butter.
