A naughty but nice treat than will definitely kick any chocolate craving with the added bonus of being high in protein and good fats, low in sugar, paleo + gluten free. Plus hidden veg always makes me happy.
2 ½ cups grated zucchini
1 cup almond meal
½ teaspoon baking powder
½ cup cacao
2 teaspoons vanilla
½ cup coconut sugar
2 tablespoons coconut oil, melted
In a large bowl, mix together all the dry ingredients. Add in the grated zucchini, then make a well in the centre of the bowl. Add in the wet ingredients and combine well. Pour into a lined loaf tin and bake at 180*C for 1 hour or until a skewer comes out clean.
Allow to cool then remove from the tin.
Serve as is, smothered in nut butter or serve warm with a spoon of coconut yogurt.
