Sugar + Grain Free Banana Bread

This banana bread recipe is perfect for the kiddies! Our bubba loves it, as do we. Although it keeps exceptionally well, it doesn’t last long at our place.

The coconut flour makes the cake light, moist and sweet – hence no need for any additional sweetener!

4 ripe bananas, mashed
¼ cup coconut oil, melted
½ teaspoon vanilla
2 eggs
½ cup coconut milk
½ cup coconut flour
1 teaspoon baking powder
2 tablespoons LSA
2 tablespoons hazelnut meal
1 tablespoon chia seeds
1 teaspoon cinnamon
Pinch salt

Preheat your oven to 190*C.

Combine the bananas, coconut oil, vanilla, eggs and coconut milk. Then add in all the dry ingredients and stir well.

Pour the mix into a silicone loaf tin (or lined/oiled regular loaf tin) and bake for 50 minutes or until cooked through.

For a clean cut, wait until the cake is cooled before you slice it.
