Blue Spirulina (derived from blue-green algae) has an incredible nutritional profile. Rich in protein, vitamins, minerals, carotenoids and antioxidants, it helps to protect cells from damage, boosts the immune system, increases metabolism, and improves digestion.

I make a batch of these each week to snack on at home. Packed with all the good stuff for growing little ones, bubba loves them too!
2 cups dry roasted almonds
1 cup organic quick oats
2 tablespoons chia seeds
2 tablespoons wild blueberry powder
2 tablespoons blue spirulina
2 cups organic pitted dates, soaked in hot water to soften
1 tablespoon coconut oil
2 teaspoons vanilla extract
Blitz the dry ingredients until the nuts have broken down. Add in the dates, coconut oil and vanilla. Blitz again until the mix comes together.
Roll into balls and place on a lined tray in the freezer. Once frozen, transfer to a jar and store either in the freezer (I like them firm and chewy), the fridge or in the pantry (if you prefer them softer).
