The easiest sweet treat – perfect for these chilly Autumn afternoons when there isn’t a whole lot else to do besides bake! Well actually there’s heaps to do, but baking is the ultimate procrastination enabler so…
1 1/2 cups spelt flour
1 cup desiccated coconut
1/2 – 3/4 cup coconut sugar (depending on taste)
1 teaspoon baking powder
1 cup coconut milk
1 teaspoon vanilla
Preheat your oven to 180*C.
Combine all dry ingredients in one bowl, mix to combine.
In another bowl, combine the wet ingredients before adding them to the dry.
Pour into a cake tin and bake for 45 minutes or until a skewer comes out clean.
